This world belongs to everyone, including the animals. Therefore our animal friends have just as much right to live in peace and harmony on this earth planet as we humans do. I have been a strict vegetarian and then a vegan for over 20 years. I am fit as a fiddle, full of energy and vitality.

Vegan Recipes —

Avocado-Potato Salad

1 large ripe avocado, mashed
6 medium Yukon gold or red potatoes
1/2 cup chopped red onion
2 ribs of celery, chopped
1/2 cup sweet red bell pepper
Sea Salt to taste
Steam and cook the potatoes until tender but not too soft.
Mix thoroughly with all other ingredients.
Keep refrigerated until ready to serve.
Enjoy this simple and delicious avocado-potato salad.


Lentil and Onion Soup
Adapted through creative experimentation
1 large onion, chopped
2 Tbsp oil
1 bay leaf
1 cup brown lentils, or orange or green
Few cloves of garlic, chopped
Salt and pepper
1 1/2 cups of water
Saute’ onions, bay leaf, and garlic until soft.
Add lentils, garlic, salt and pepper to taste, and water.
The cooking time will depend upon the lentils you purchase. The orange ones cook within 30 minutes. The brown and green take longer but have a delicious flavor.
Experiment with all three types of lentils.
This soup is full of protein and vitamins.
